Warm Tomato Salad

If you really love tomatoes, but you might be getting just a wee bit burned out on them, here’s a new twist on tomato salad.  It’s a healthy alternative to cold salads (which are often drenched in fatty dressing and covered with cheeses, bacon, and croutons).

It’s simple, it’s fast, it’s delicious.

  • Fresh ripe tomatoes (1 per person)
  • Chopped garlic (1 clove per person)
  • Olive Oil
  • Salt
  • Pepper*

Heat a couple of tablespoons of olive oil in a skillet just until hot, add the chopped garlic and cook for about 1 minute. Add sliced ripe tomatoes (I leave the peel on, but you don’t have to) and cook for about 1 minute on each side. Sprinkle with salt and pepper. Serve warm in a bowl. A naturally healthy warm salad.

*You can certainly jazz up this warm tomato salad if it suits. Fresh oregano, basil, a sprinkling of Parmesan cheese, or anything else that appeals to you. Just watch the add-ons if you are counting calories. Enjoy.

    • Flat bread would make it kind of like pizza. I’m sure it would be tasty, but I’m avoiding all sources of gluten for the time being. Thanks for your comment.
